Nutritional supper experiment o’clock. Egg noodles cooked and served in vegetable stock. Quorn chunks and pine nuts fried in teriyaki sauce with ginger sesame oil. Add spinach and sliced baby plum tomatoes to heated pan just long enough to wilt and heat. Combine then add a splash of soy sauce on top.

Lazy Vegetarian Shepherd’s Pie
Quick vegetarian version of shepherd’s pie. Basically no assembly required! If you skip the butter its vegan too.
Lazy Shepherd’s Pie
Fry chopped onion in olive oil
Add Quorn mince
Mix Coleman’s Shepherd’s Pie sachet mix
Add to mince and onion
Cook carrots and peas
Add to mince and onion
Cook new potatoes & add butter with herbs
Serve on side of mince & vegetable mix

Cauliflower Macaroni Cheese
A vegetarian variation on two cheesy themes just to get some pasta and vegetables into one meal. Quick to prepare especially if you cheat with a ready made lasagne sauce.
Cauliflower Macaroni Cheese
Preheat oven to 200 degrees
Boil cauliflower in low salt water for 12 minutes
Boil macaroni in low salt & olive oil water for 12 minutes
Thinly slice spring onions
Crumble soft part of few slices of white bread
Add cauliflower, pasta & spring onions to casserole dish
Add cheese lasagne sauce & mix well
Season with white pepper
Sprinkle crumbled bread on top
Sprinkle grated mature cheese on top
Sprinkle coriander on top
Bake in oven for 20 minutes
