Immune Boosting Diet Quest

Still on a quest to boost depleted immune system and fight infection with diet. A challenge for a vegetarian with ulcerative colitis and breathing allergies.

Tonight was penne pasta in antioxidant tomato & basil sauce. With added quorn for protein. Broccoli for vitamin C, fibre, selenium, plus its anti-bacterial and anti-viral properties (major bonus given current viral infection in lungs). Then onions for vitamins C and B6 , folic acid, plus anti-inflammatory and antioxidant properties. Pan fried the vegetables & quorn in olive oil for vitamins K and E plus omega fats content. Good measure of pine nuts on top for protein and black pepper for a spicy kick.

One week into immune boosting food experiment and its helped with the plethora of strong medication that needs to be taken each day and night. There’s been a few mishaps (for example it appears that mangos and sweetcorn are no friend to ulcerative colitis!) but its worth preservering with for its hopefully long term health benefits. Tonight’s dinner tasted warming and comforting too. Now I’m off for a carb snooze.

Teriyaki Spinach Quorn Noodles

Nutritional supper experiment o’clock. Egg noodles cooked and served in vegetable stock. Quorn chunks and pine nuts fried in teriyaki sauce with ginger sesame oil. Add spinach and sliced baby plum tomatoes to heated pan just long enough to wilt and heat. Combine then add a splash of soy sauce on top.

Immunity Boosting Snacks

I’m experimenting with various nutritional snacks to try to increase my immune levels whilst I work through a slow recovery process from illness. It’s a challenge as I’m vegetarian, have ulcerative colitis and various asthma/breathing allergies. So it’s trial and error to see which foods react in a positive, negative or tasty way. Tonight’s snack was pecans, blueberries and Special K cereal with hazlenut soy milk.

The Hills Are Alive

Today I’ve got to attempt a few slow steps on the staircase. It’s easy when you’re healthy. It’s an epic daunting mountain when your lungs are not working! Still, try we must during tricky days, so it’s time to dig deep, go slow, and most importantly breathe. It’s made me think of this iconic image from one of my favourite musicals The Sound of Music. So I shall try to adopt some of Maria von Trapp’s energy today.

Blooming Lovely

These get well flowers were brought in by my lovely sister and are still blooming one week later. They really cheer up the sterile hospital environment and make me happy each time I look at them. Glorious outside nature brightening up the inside world.
